Charred Corn Salad with Avocado Vinaigrette
If you haven’t tried our Avocado Vinaigrette, now is the perfect time with this recipe!
INGREDIENTS
6 cobs of corn (husked)
1 green onion (finely sliced)
3 jalapeños (two with seeds and membrane removed- all finely diced)
1-2 tbsp Cilantro (chopped)
Zest and juice of one Lime
1/4 tsp Cayenne pepper
1/4 cup Gigi’s Avocado Vinaigrette
DIRECTIONS
Lightly rub husked corn with oil.
Place on bbq (Med Heat).
Allow a nice char to develop. Approx. 10-15 minutes.
Let cool then cut off the cob.
Mix all ingredients together and add salt and pepper to taste.
