Charred Corn Salad with Avocado Vinaigrette

If you haven’t tried our Avocado Vinaigrette, now is the perfect time with this recipe!

INGREDIENTS

  • 6 cobs of corn (husked)

  • 1 green onion (finely sliced)

  • 3 jalapeños (two with seeds and membrane removed- all finely diced)

  • 1-2 tbsp Cilantro (chopped)

  • Zest and juice of one Lime

  • 1/4 tsp Cayenne pepper

  • 1/4 cup Gigi’s Avocado Vinaigrette

DIRECTIONS

  1. Lightly rub husked corn with oil.

  2. Place on bbq (Med Heat).

  3. Allow a nice char to develop. Approx. 10-15 minutes.

  4. Let cool then cut off the cob.

  5. Mix all ingredients together and add salt and pepper to taste.
