Avocado Fennel & Grapefruit Salad with Gigi’s Lemon Garlic Vinaigrette

INGREDIENTS
1 fennel bulb (thinly sliced)
1 grapefruit (segmented)
1 avocado (sliced)
1 cup spinach
pecorino romano (shaved)
1/8 cup toasted pumpkin seeds
DIRECTIONS
Coat and massage sliced fennel with about 2 tbsp of Gigi’s Lemon Garlic Vinaigrette. Place to the side to marinate for 5-10 minutes.
Add washed spinach to a large bowl and dress with Gigi’s Lemon Garlic Vinaigrette.
Peel and segment grapefruit (see video tutorial for more detailed instructions). Layer segmented slices on top of spinach.
Halve avocado, remove pit and skin, and slice length-wise. Add to salad bowl.
Add marinated fennel and pumpkin seeds.
Top with shaved pecorino romano. Quantity as desired.
